150 bottles AOC Limoux TOQUES & CLOCHERS - Clocher SAINT-HIL - Lot 77
150 bottles AOC Limoux TOQUES & CLOCHERS - Clocher SAINT-HILAIRE (Winemaker Thomas Roger, Mediterranean terroir) Tasting notes: Eye: pale yellow robe, brilliant, limpid. Nose: quite fine with fruity notes of white peach. Mouth: nice attack, fresh wine where we find notes of white flesh fruits, with a peppery and liquorice touch. The finish is quite long, with spices and in particular peppery liquorice. Winegrower: Coming from a long line of winegrowers that goes back before the French Revolution, it is quite natural that Thomas Roger takes over from his father in 2018 after his retirement. His father, Jean, had been running the family estate in Gardie since 1979, then expanding to Saint Hilaire in 1984 where he acquired the parcel of land of the present Clocher. The history of Saint Hilaire is closely linked to that of the abbey. It begins in the time of the Romans. The village will spread over time around this abbey. In 1531, in their cellars, the monks discovered a wine that the hazards of fermentation had provided bubbles. The first sparkling wine in the world was born! The monks created the famous Blanquette de Limoux and another Benedictine, Dom Pérignon, passing through Saint Hilaire, discovered the process and took it home to his home in Champagne!
