60 bottles AOC Limoux TOQUES & CLOCHERS - Clocher LA DIGNE D'AMONT (Winegrower Jérôme Boye, Oceanic terroir) Tasting notes: Eye: pale yellow robe, brilliant, limpid. Nose: we have finesse with a nice intensity, on notes of citrus and white fruits. Mouth: beautiful attack, with a good freshness. An ample wine where citrus and lemon aromas mingle with notes of grey pepper, giving relief to the wine. The finish is long, with citrus fruits and ending on notes of grey pepper with a nice persistence. Winegrower : It was in 1998 that Jérôme Boyé succeeded his father in the destiny of the family estate. Jérôme's grandfather, Jean Boyé, was one of the first founding members of the Cave des Vignerons du Sieur d'Arques. The chardonnay plot, established in 1980, is located in the heart of the village of La Digne d'Amont, which by its circulatory shape evokes a thousand years of history. Like his grandfather, Jérôme is a pioneer in adopting a method of cultivation based on respect for the environment, established by a set of specifications for sustainable management.
