notes: Eye: pale yellow robe, brilliant, limpid. Nose: fine and powerful with citrus fruit notes such as yellow lemon as well as a hint of white pepper. Palate : nice attack, the wine is fresh with lemon and pepper notes. It is a wine with volume and balance. The finish is long on spices.
Winegrower: The Toques et Clochers plot was leased by an association created in February 2019 to participate in the restoration of the Abbey of St Hilaire, it has 33 members. This Association also has the task of recreating the link between the Abbey and the cultivation of vines with the Toques et Clochers plot as well as an old plot of Mauzac (the emblematic grape variety of Limoux with which it all began). The origins of the Abbey are ancient, dating back to the 8th century. In the 1540s, Mother Nature changed the nature of the wines in the Abbey's cellars. The monks discovered a wine that the hazards of fermentation provided with bubbles. The first sparkling wine was born! The monks then created what would become the famous Blanquette de Limoux.
