150 bottles AOC Limoux TOQUES & CLOCHERS - Clocher ROUFFIAC - Lot 70
150 bottles AOC Limoux TOQUES & CLOCHERS - Clocher ROUFFIAC D'AUDE (Winemaker Pierre Teisseire, Mediterranean terroir) Tasting
notes: Eye: pale yellow robe, brilliant, limpid. Nose: elegant and quite complex, with notes of fruit such as peach and apricot, and slight mentholated notes, as well as white pepper. Palate : nice attack, a fresh wine with notes of peach, apricot and white pepper. The wine is balanced. The finish is long and complex and ends with a hint of saltiness.
Winegrower : Pierre Teisseire comes from a winegrowing family in the commune of Rouffiac d'Aude and settled in 1998. He has been acquiring plots of land that have been lying fallow for at least 50 years. Following the example of his father Jean-Claude, also a bell-tower in Rouffiac d'Aude, Pierre restructured the estate, clearing land and terraces to arrive at 18 ha in one piece, of which only 9 ha are vines. Like his ancestors, Pierre was a pioneer in adopting a method of cultivation based on respect for the environment and set up a Plan Végétal Environnement to promote the natural biodiversity of his estate. The parcel of Clocher comes from the vines of the "Prieuré Romain" of which some stones still remain. The line of the Teisseire winegrowers is not finished, since Pierre has three sons
who will perhaps take over and continue the work initiated by the first one, Pierre Teisseire in 1840.
