150 bottles AOC Limoux TOQUES & CLOCHERS - Clocher SERRES (W - Lot 53
150 bottles AOC Limoux TOQUES & CLOCHERS - Clocher SERRES (Winegrower Thierry Bifante, Haute-Vallée terroir) Tasting notes: Eye: pale yellow robe, brilliant, limpid. Nose: fine on citrus fruit notes, of lemon, nectarine type, as well as a hint of pineapple. Palate: the attack is frank and lively with notes of lemon and nectarine and a hint of pineapple. The wine is complex, combining finesse, roundness and freshness. The finish is long, with citrus fruits and spices as well as sweetness. Winegrower : Thierry Bifante is a winegrower in the communes of Peyrolles and Serres. He naturally took over the torch of the Clocher de Serres following the retirement of Daniel Cros. The history of Serres is ancient, as attested by numerous vestiges: the 14th century fortified house facing Mont Cardou, Le Tinel, a 15th and 16th century vaulted cellar where the former abbots of Alet-les-Bains used to make their wine, and finally, the church dedicated to Saint Pierre with its murals dating from the end of the Middle Ages, which were brought to light during the restoration of the church. Five hundred years later, Thierry Bifante still perpetuates the work of these monks by elaborating this "Clocher de Serres" whose sale will help to safeguard the religious heritage of Limoux.
